Appellation: Calabria, Italy
Grape Variety: Gaglioppo 55%, Cabernet Franc 15%, Cabernet Sauvignon 15%, Merlot 15%
Process: Grapes are softly pressed and undergo fermentation at a controlled temperature. Maceration takes place for about 7 days for the Gaglioppo grapes and 25 days for the other varietals. The wine ages in stainless steel tanks for 6 months. Then it is aged for about 21 months in oak casks, 1 month in barriques and later 2 more months in the bottle.
Alcohol: 13.5 – 14.5% by volume
Pairing: Perfect with elaborate meat dishes, game and aged cheeses. Best served around 64° F.
